American Style Pancakes

For the week that’s in it, it’s got to be pancakes. There are so many options when it comes to pancakes, but for me it’s all about the American style. I love the light and fluffy texture. So scrummy!! Perfect with a combination of treats. This year I opted for some greek yoghurt and mixed summer berries, with a dash of Agave Nectar (or clear honey). If you have time for a special breakfast (aka a treat), they’re are also yum with scrambled eggs and a little dash of maple syrup.


  • 2½ teaspoons baking powder.
  • 1 pinch of salt.
  • 1 tsp. white sugar.
  • 2 eggs (beaten)
  • 30 grms. butter (melted and cooled)
  • 300 ml. milk.
  • 225 grms. plain flour.
  • Butter for frying.


  1. If you’d like to do this the super easy way, pop everything into a blender. But if all you have to hand is a mixing bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug – the jug is much easier for pouring onto the pan.
  2. Heat a smooth griddle or pan on the stove. Cook for 1 minute each side.
