For the week that’s in it, it’s got to be pancakes. There are so many options when it comes to pancakes, but for me it’s all about the American style. I love the light and fluffy texture. So scrummy!! Perfect with a combination of treats. This year I opted for some greek yoghurt and mixed summer berries, with a dash of Agave Nectar (or clear honey). If you have time for a special breakfast (aka a treat), they’re are also yum with scrambled eggs and a little dash of maple syrup.
- 2½ teaspoons baking powder.
- 1 pinch of salt.
- 1 tsp. white sugar.
- 2 eggs (beaten)
- 30 grms. butter (melted and cooled)
- 300 ml. milk.
- 225 grms. plain flour.
- Butter for frying.
- If you’d like to do this the super easy way, pop everything into a blender. But if all you have to hand is a mixing bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug – the jug is much easier for pouring onto the pan.
- Heat a smooth griddle or pan on the stove. Cook for 1 minute each side.
